Raw Chinese Salsa with a Teriyaki Dressing
Instructions for the Salsa -
6 Fresh Tomatoes - chopped 2 Sprigs of Coriander - Both leaf and stalk, finely chopped 1 Small Shallot - Red onions are sweet enough to act as a substitute. Finely sliced. 2 Stalks of Chinese Chives - Finely chopped 1 tsb. Soy Sauce
1. In a bowl combine your chopped tomatoes, coriander, chives, shallots and chives with the soy sauce and set aside.
For the Teriyaki Dressing 4 tbsp. soy sauce 4 tbsp Mirin 2 tbsp. sugar 2 tsp. Cornflour 2 tbsp. water A pinch of grated ginger A pinch of sesame seeds 1. Simply combine the soy sauce, mirin and sugar in a pot and bring to the boil. 2. Mix together the cornflour and water in a separate bowl and add to the pot. 3. Lower the heat and begin whisking to avoid lumps. Allow it to reduce till it gets to the consistency you prefer. If your anything like me and do find the occasional lump or two, simply run through a strainer. No one will ever know. Mwhaha Combine both sets of ingredients in a lovely bowl with some crackers or rice cakes and enjoy. x
