Make mine a ... Thai Omelette

Thai OmeletteIngredients 2 tablespoons oil 1 onion, sliced 1½ teapoons light soy sauce 1½ teaspoons fish sauce 1 Bunch coriander 3 eggs 1 Spring Onion Lime wedge, to garnish Instructions Heat 1 tablespoon of the peanut oil in a wok or large frying pan. Cook onion and garlic until soft. Combine the soy and fish sauces in a bowl, and beat together in the eggs (you want a lot of air to get into this mixture). For a fluffy, lightly-browned omelette, make sure your pan is hot before you put in the egg mixture. You can test it by dropping a tiny bit of the egg mixture in the pan and see if it sizzles. Pour the mixture in the pan. Move the pan around some to evenly distribute the mixture so the middle gets cooked. Chop up your spring onion and coriander and place it on top (I eat mine whole). Serve immediately drizzled with oyster sauce and garnished with a lime wedge. You can swap out the noodles for some steamed jasmine rice, or even toast.
